Hi Shaun - I've been meaning to comment on your three compositions below. Great eye.
The same morning I was shooting the roadside, I came on a horse feeding outside a barn - tried to imitate your great equine images from the course - not a chance. Will keep trying.
The water lily is perfect - flowers are hard, because if you shrink the depth of field too much, you miss the close and far edges. I haven't quite found the solution to that.
